How to fix Okonomiyaki~Hiroshima Style
For Grace....
<Ingredients (top to bottom, left to right)>
Egg
Pork
Yam (if possible but not important)
Cabbage
Dried bonito powder
Beansprout
Deep fried squid (junk confectionery)
Green onion
Flour for Okonomiyaki
Otafuku Sauce (sweet Worcestershire sauce)
Deep fried squid (junk confectionery, sorry just one is enogh)
Noodle for fried noodle (yakisoba)
Important gredients for Hiroshima style.
<Making dough>
Put suitable quanyity of flour into a bowl.
If the dough seem to be too hard, please add extra water.
Get another bowl and put water. Add few amount of vinegar into the water.
Dip the yam for a couple of minutes. If you skip this process, the yam makes your hands itchy. Also it turns into black quickly.
Add the grated yam into the dough.
The yam makes the dough much sticker.
To tell you the truth, this is too sticky and I added some extra water.
Also this Yam part is not so important. I think yam is not easily available in your country, so you can skip this part.
Chop the vegitables in advance. Shreded cabbage, round sliced green onion and beansprout (as is).
Heat the hot plate and put oil.
Meanwhile, heat the noodle. Just heat it with few water for steaming.Put the dough on the hot plate.
Smash the deep fried squid....
and pile them on the beansprout.
The first hurdle comes.
Flip over the dough.
One, two.....
Three!!
Yes!! Good job, Shige!!
Push the scattered cabbage under the dough.
Place the lid and steam for a couple of minutes.
Put the pre-jeated noodle next to the dough.
And move the dough on the noodle.
Then put two eggs next to the dough and easily break he yolks.
Put back the dough on the eggs.
Again put the scttered things under the dough.
Sorry I failed to take a picture of one stage. Please flip over the dough once more. Then all process is done.
Put the Otafuku souce.
Depends on your taste, please put the green onion on the okonomiyaki.
